Ok now it is Sunday night and I have nothing for the lunch boxes tomorrow. So I found a great quick muffin recipe that I have made gluten and dairy free, for all you out there who have little ones on gluten and dairy free diets. You can have a play with it and substitute any of the items for gluten and dairy products.
1 3/4 cups Plain Flour or GF flour or spelt
2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp xanthum gum
If you are using self raising flour and not making GF muffins you don’t need the baking powder, baking soda or xanthum gum.
2 tb Cocoa or cacao
3/4 cup of sugar ( I used rapadura or coconut sugar much better for those little tummies)
3/4 cup choc chips, I use dairy free dark choc
1/2 cup walnuts (optional)
1 cup milk or coconut milk, almond milk, rice milk or soy milk
1/3 cup canola oil
1 tsp vanilla
Mix all the dry ingredients and the choc, you can save some of the choc bits and sprinkle on the top before you bake them. Pour all the liquid ingredients and the egg into a jug and then mix through the dry ingredients, fold through walnuts if using. Remember don’t over mix, a lumpy mix makes better muffins.
Spoon into a greased muffin tray and bake for 15 mins at 200 c. Makes 12
