What’s For Dinner- Thai Sticky Beef Mince Stir Fry

Hello Joy people. My husband picked up a Beef and Lamb brochure at the butcher the other day and I found this great quick and easy (and very tasty recipe). Great for a busy weeknight.

I doubled this and it served 4 people quite easily.

Ingredients:
300g beef mince
1 tbsp sunflower oil
6 cloves garlic chopped
2 chillies deseeded and sliced (keep the seeds in if you want some spice)
1 tbsp fish sauce
2 tbsp kecap manis (you can get this at coles and woolies or of course any asian grocer)
1 cup brocolini (or you can use any type of asian greens)
1 cup shredded red cabbage
1 cup sliced yellow capsicum
1/2 lime
225g thin fresh rice noodles (blanched in boiling water and drained)

Method:
Heat oil in a wok and fry the chilli and garlic for a few seconds.

Add the beef don’t stir it too much and allow it to brown. Once the meat is brown add the fish sauce and mix, then add the kecap manis and stir for 5 -8 minutes or until caramelised.

Add the brocolini to coat in the sauce and stir until it starts to soften. Add the cabbage and capsicum and stir for a few minutes (don’t over cook). Turn off the heat and then squeeze over lime juice and serve with rice noodles.
