What’s for Dinner Quinoa, pumpkin and feta salad

Hello Joy peeps

So I’m sure many of us have heard all about quinoa and that its this amazing food we all should be eating and yes infact it is pretty awesome 🙂

If you’ve read in the news though about how it is becoming too expensive for the farmers who grow it in Bolivia to actually buy themselves. But how many of us actually know what to cook with it ???

Heres an awesome salad I cook up which my whole family will eat and so far no complaints ( which is huge 🙂 !!! )

Ingredients

1 cup of quinoa

1 cup of boiling water

1/2 a pumpkin

1/4 cup pine nuts and 1/4 cup of pepitas

1/2 cup feta cheese

handful of Basil leaves

Method

. Boil a cup of water in a small pan

. Cube the pumpkin into small bit size pieces and roast in the oven for 20 -30mins until golden brown

. Add the quinoa to the pan of boiling water and leave to absorb on a very very very low heat. This can take approx 30mins .

. Roast the pine nuts and pepitas for approx 5 mins in the hot oven with the pumpkin , watch these though as they can go from golden to caramelized ( ie burnt 🙂 ) in a matter of moments .

. When the quinoa is all absorbed, stir through 1 tablespoon of olive oil

. Add the cooked nuts and pumpkin

. stir through the crumbled feta cheese

. Ripe the basil leaves into small pieces and stir though
