What’s for Dinner – Quick and Easy Charred Beef and Rice Noodles

Here is a really quick fabulous mid week dinner that I found in the delicious magazine that all the family will love, even the fussy ones.

Ingredients:
600g rump steak sliced into thin strips, or you could use any meat you like.
2 1/2 tbs dark soy sauce
400g flat fresh rice noodles or you can use dried noodles just soak them in boiling water before you start.
1 tbs sunflower oil and sesame oil
1/2 bunch spring onions white and pale green part chopped, dark green sliced.
1 tbs fish sauce
1 bunch broccoli I halved lengthways
1 cup bean sprouts
SAMBAL oelek which is chilli paste to serve, you can use whatever chilli paste/sauce you prefer.

Method

Heat a large wok over high heat. Combine the beef with half the soy sauce, then stir fry for 3-4 minutes until lightly charred and transfer to a plate.
Add noodles to the wok with remaining soy sauce and stir fry for 1-2 minutes until lightly charred. Add oils, chopped spring onions then fry for a further minute. Add fish sauce, 2 tbs water and broccoli and cook for a further 2-3 minutes until tender.

Return beef and any resting juices to the wok and heat through. Serve with bean sprouts and slice spring onions and chilli pate.
