What’s for Dinner ? we hear you cry
Here is a couple of really quick pizza toppings we love at our place. You can make your own dough or grab a ready made base at the shops, whatever suits your family.
4 cups of plain flour
7g of dried yeast ( 1 packet )
1 & 1/2 cups of warm water
1/4 cup of olive oil
pinch of salt
mix the yeast with warm water and add to flour with oil and salt
Mix together and knead well together
Leave to rise in warm place until doubled in size
Roll out and add toppings
Proscuitto with Rocket and Parmesan
For the sauce I just whiz up a tin of tomatoes with some dried oregano or whatever herbs you prefer and some salt and pepper and sometimes a little pinch of dried chilli.
Torn Basil leaves as much or as little as you like
1 nice ripe tomatoe sliced
buffalo mozarella or baby boconccini about 60 grams
Sea slat and cracked pepper
1 tbs Balsamic vinegar
2 tbs extra virgin olive oil
A handful of rocket
6 thin slices od proscuitto
Parmesan to serve
Spread your base with sauce and sprinkle over a small amount of mozarella. Top with basil, tomato and buffalo mozarella and season.
Pop in a hot oven and cook until golden and crisp.
Remove from the oven and top with proscuitto, shaved parmsean and freshly dressed rocket.
about 60g buffalo mozarella torn into small pieces and a little extra to add after it is cooked
1 tablespoon chopped parsley
1 vine ripened tomato sliced
Slied pepperoni as much or as little as you like
Salt and pepper
Fresh mint leaves
Dried Chilli flakes
Pop some sauce on your base and spread over some crushed garlic. Top with shredded mozzarella, buffalo mozzarella and parsley. Place tomato and pepperoni around the pizza and season with salt and pepper.
Cook until golden and crips and when ready sprinkle over mint leaves, chilli and some extra buffalo mozarella pieces.
