What’s For Dinner – Mudcrabs

So as my husband walked in the door with some amazing fresh mud crabs, my mind was racing as to what I could create so many options. In the end I decided on a simple fresh tomato and chilli pasta. Then this got me thinking I had just been to the markets and had plenty of fresh chillies and cherry tomatoes in the fridge and I knew I could throw something together, then I thought, I am sure there are plenty of you out there who might struggle coming up with quick ideas on the spot for those busy weeknights. So I thought I would start a little what’s for dinner blog. Hopefully each week inspiring you with what is in season and what you can turn it into. So to start it all off why not give you my recipe for Mudcrab with Angel hair pasta and fresh chilli and tomatoes.

Ingredients
2 cooked medium mud crabs
2 tbs extra virgin olive oil
2 cloves of Garlic
2 fresh Chillies (seeds removed if you don’t want it too hot)
1 punnet of Cherry tomatoes
150 ml Cream
Zest of a lemon
Crab meat
1/2 bunch Parsley
Angel hair pasta

Method:
Put water on to boil for pasta and have pasta cooking while you prepare the sauce. Heat olive oil in a pan and then add garlic, chilli and tomatoes and fry for a few minutes until tomatoes just start to soften. Add the cream and lemon zest and reduce slightly. Add crab meat and parsley and heat through. Pour over cooked pasta and served with more fresh parsley.
