Whats for Dinner – Guilt free chicken nuggets and chips

As with everyone else, we love chicken nuggets and chips for dinner 🙂 and to have a healthy option just makes that smile even bigger on my face so here you are .

We use sweet potato chips and coat the nuggets in shredded coconut and dakka to give it some true yumminess and serve with some salad on the side and you have a complete winner dinner every time !

So here you go

Ingredients

1x large sweet potato

coconut oil

2x cloves of garlic

2 large chicken breast chopped into bite size cubs

1x egg

shredded coconut

dakka or seasoning of your choice

Method

preheat the oven to 200 c

Chop the sweet potato in chop size pieces

melt the coconut oil on a baking tray in the oven, just enough to coat the baking sheet not any more.

When the oil is hot add the sweet potato chips and crushed garlic cloves to the hot tray and return to the oven.

These will take approx 40mins to cook

Add a 2nd baking try to the oven with some coconut oil on it to melt

Beat the egg in a small bowl and add the chicken pieces to it and mix

Add the shredded coconut and dakka and mix through the chicken.

Place the chicken on the 2nd preheated baking tray and return to the oven.

Depending on the size of your chicken cubes these will take from 10-20 mins.

 

Serve with a lovely green salad
