What’s for Dinner- – Frittata

Does this look like the makings of a mystery box from Masterchef. Well you can either create something fabulous with these ingredients, please let me know what you come up with or if you like you can make a fabulous fritatta that I found in the July edition of delicious magazine. It is easy to make gluten free if you get some of the great chorizo that we get from the Rocklea markets on a saturday morning from BACKA gourmet foods who is also at the Moggill markets. Unfortunately it is not dairy free but if that is a problem like it is for my son he is having grilled chicken you can’t always win!!! We served with a simple tossed salad and it was fantastic. Of course you can add anything to this you have in the fridge which is a great way of making the most of what you have.

Ingredients:

1 bunch broccolini

1 tbs olive oil

175 g chorizo

1 clove garlic chopped

6 eggs

1/4 cup thickened cream

50 g gruyere cheese grated

Method:

preheat your grill.  Blanch broccolini in boiling salted water for a few minutes until tender then drain.  Heat oil in an oven proof fry pan over a medium heat.  Add chorizo and fry for 3-4 mins until crisp then add garlic and cook stirring for 30 secs.  Then remove and set aside.

Chorizo - Copy

Whisk the eggs together and add the cream, cheese and salt and pepper.  Arrange the broccolini in the pan and pour over the egg mixture and scatter with chorizo.

Cook over a medium heat for 1-2 minutes until the bottom is set then place under the grill for 5 minutes until golden and set.

Remember have a play with it, you can add just about anything.
