Here is a lovely quick week night dinner I dug up from my archives.
1tbs sea salt
2 skinless chicken breasts
1 egg yolk
Zest and juice of a lemon
125 ml light olive oil
2 anchovy fillets finely chopped
3 tbs salted capers rinsed and drained
3 tbs toasted pine nuts
3 tbs currants
1 very large handful flat parsley
Warm crusty bread to serve
Put a large saucepan of water over high heat, add the sea salt and bring to the boil. Add the chicken, then cover the saucepan and remove it from the heat. set aside for 40 minutes to allow the residual heat to gently poach the chicken. Lift the chicken out of the water no allow to cool, then shred the meat.
in a small bowl which the egg yolk and lemon juice, slowly add the olive oil, whisking constantly to form a thick, creamy mayonnaise. fold the anchovies through and season with salt and pepper.
Put the chicken, lemon zest, capers, pine nuts, currants and parsley in a bowl and toss to combine. Stir the anchovy mayonnaise through the salad and serve with warm bread.
