What’s for Dinner – Brown Rice Salad

This is not one of my recipes but came from one of the mum’s at my daughter’s school. So a big thanks to Arnella we have been making this for years and love it. We just served it with a piece of any grilled meat, chicken, fish or seafood. It is a really quick easy meal.

Ingredients:
3 CUPS OF COOKED BROWN RICE
1 CUP OF CHOPPED CELERY
½ CUP OF CHOPPED RED CAPSICUM
½ CUP PEANUTS (UNSALTED)
½ CUP CASHEWS (RAW UNSALTED)
½ CUP SULTANAS
¼ CUP CHOPPED RED ONION
3 TABLESPOONS CHOPPED PARSLEY

SAUCE
½ CUP PEANUT OIL
2 TABLESPOONS LEMON JUICE
1 TABLESPOON CHUTNEY (ROSELLA FRUIT)
1 TABLESPOON SOY SAUCE
1 TABLESPOON CURRY POWDER
1 DESSERT SPOON OF BROWN SUGAR

MIX THE SAUCE TOGETHER & POUR OVER RICE & CHOPPED INGREDIENTS
