Whats For Breakfast – Dairy free and Spelt pancakes

Have to say we love pancakes for breakfast in our house , the roll up crepe type are our favourite .

But we have to watch out for the wheat and dairy so after much trial and error 🙂

I came up with these that work every time

1/2 cup wholemeal spelt flour

1/2 cup plain spelt flour

4 eggs

1/2 can coconut milk

1/2 cup of almond milk

1 tspn of coconut oil

Mix all together and then pour into a hot fry pan just enough to coat the bottom of the pan . ( if you’re mixture is a little too thick add some more almond milk ) as I have to admit my measurements can be a little different every morning as I tip it all in .

Flip over when underside golden and cook the other side

Serve with , maple syrup or fruit and yoghurt or lemon juice and sugar ( we use rapadura as better for tummies ).

I often then roll up the extras and keep in an air tight container in the fridge and eat the next morning 🙂

      Thanks so much for your comment, we are only wheat intolerant in our house and although spelt and wheat are closely related the gluten in spelt reacts differently to wheat and we have found that this doesn’t cause a reaction like wheat does. I appreciate that for coeliacs and some others with wheat intolerance this isn’t the case but for us this is a great solution.
