So its Christmas and so we most definitely need to add some mince pies to the Joy recipe book .
This is one is 1/2 cheats and 1/2 home made which to me makes it totally home made as I love anything extra easy
These are just so yummy they melt in your mouth and before you can blink they have all gone !!
So here it is thanks to my gorgeous mum Lois, who has been making these for as long as I can remember.
1 lb of plain flour ( I use plain spelt flour )
zest and juice of 1 orange
2 jars of robertson fruit mince ( yep I know cheats way )
1 teaspoon of ground cinnamon ( optional for an extra taste of Christmas and its amazing ! )
To make the pastry
.Crumble the butter and flour together making sure you use cold butter
.Add the orange zest and stir through
.Add the optional cinnamon here if you like
.Add the orange juice until it forms a dough
.leave the dough to rest in the fridge for 30mins
.roll the pastry out and cut out your pastry rounds out with a cookie cutter
.put a pastry round into each space in your patty pan
.fill each one with a spoonful of fruit mince
.add a pastry lid to each one and Pearce the lids with a fork
.cook in a hot oven for 10-15 mins until golden brown
.let them cool off ( which in our house almost never happens and we all end up with burnt tongues 😉 )
.sprinkle with icing sugar and devour !!!!
