Spelt Flour and Dairy Free Banana Bread

Hello peeps

I’m more of a baker than a chef so I’m all about the cookies and the cakes and have adapted this recipe over the years to make it with spelt flour which is an ancient grain, so a wheat and dairy free banana bread.

This Banana bread is a staple in our house and I usually add extra chia seeds so it makes a great breakfast bread as well , my lovely hubby has it toasted most mornings. Its also really quick and easy to make, which is my kind of baking .

. 1/3 cup coconut oil

. 1/2 cup of honey or 1/2 cup pureed apple/pear

. 1 tspn vanilla extract

. 2 eggs

. 2-3 bananas mashed

. 1 cup of almond meal

. 3/4 cup wholemeal spelt flour

. 1/2 tspn salt

. 1/2 tspn baking soda

. 1/4 hot water

. 1 cup chopped walnuts

. tablespoon chia seeds

. Mix oil and honey/apple together

. Mash the bananas and add to the mixture

. Add all the rest of the ingredients

. Mix the baking soda with the hot water and add to mixture

. Pour into loaf tin

165c oven for 55mins approx
