Kids lunch box ideas – pizza and pesto scrolls

These pizza or pesto scrolls have become a firm favourite in our household and do really well for you to make a whole batch and freeze them. Then at lunch box packing time your kids can grab a couple out of the freezer and they will be defrosted by lunch time 🙂

So 1st Pizza Dough you can use this recipe to make big pizzas too 🙂


500g plain flour ( I use spelt )

2 teaspoons of dried yeast

1 & 1/3 cup of warm water

4 tablespoons olive oil

pinch salt


sift flour into large bowl

dissolve dried yeast in the warm water

add to the flour with the olive oil and salt

knead well into a smooth ball

leave to rest in a warm place for 1 hr until its doubled in size

While the dough is resting you can make your pesto


1/2 cup of pine nuts

1 garlic clove

2oz of finely grated parmesan cheese

4 tablespoons of olive oil

1 cup of either basil or rocket, firmly pressed down or 2 cups if loser


Put all the ingredients in a blender and blitz until a smooth paste

Now to make up your pizza scrolls

So 1st you need to roll out your pizza dough. I do this in 2 batches .

Now I mix 2 tablespoons of my pesto with some tomato paste to make my pizza sauce, which I spread thinly on the dough. Add some grated cheesed to the top, this is where I use the ready packs of pizza cheese from all supermarkets



On the 2nd pizza base I will just add the pesto sauce for my pesto scrolls

Now carefully roll these up into little scrolls and cut


Place into a hot oven 220c for 15 mins

Remove when golden brown and leave to cool then freeze them.
