We all love an idea that works and saves us time and this frozen cookie dough is perfect!
This is a great one that if you have some spare time you can make quite a few batches and then freeze them in a log ready to pull out and bake whenever you need them. It is just a basic cookie dough recipe and you can add whatever flavours to it you like.
200g Butter ( you can use coconut oil works perfectly )
1/2 tsp vanilla essence
1 cup icing sugar (I use Rapadura)
1 3/4 cups plain flour (I use Spelt or you can use Gluten Free)
1/2 tsp Bicarb
Beat the butter, vanilla, sugar and egg until light and fluffy.
At this stage you can add any extra’s ie:
.Cranberry and coconut
.Orange or lemon zest
.Mixed dried fruit
.Jam in the middle once defrosted and make them into Jam Drops
Then mix in flour and bicarb, and roll into a long log the size that you want your cookies.
Wrap in cling film and freeze.
When you are ready to cook some, take out the roll and slice off .5cm thick disks and place on a lined baking tray
Bake for 8-10 mins at 180c, until golden brown
Devour really quickly 🙂
