Addictive popcorn snacks ( and healthy too )

How many of us are always looking for something to snack on and now a days just about everything is unhealthy. So as I often do 🙂 I went into the cupboard to see what I could create and came up with this incredibly easy and surprisingly addictive snack. And yep reckon its got the healthy aspect well and truly covered !!!

And its Gluten free, dairy free and refined sugar free 🙂

Ingredients

1 cup of sunflower seeds

I cup of pumpkin seeds

1 cup of chopped up almonds

1/2 cup of sultanas or cranberries (or both if you like)

3 cups of air popped popcorn

50g of dark chocolate ( I use 85% ) chopped

1/3 cup of coconut oil

1/2 cup of rice malt syrup

Method

Place all the dry ingredients in a bowl

Place coconut oil and rice malt syrup in a pan and bring to boil and simmer gently for 1-2 mins ( careful not to burn it )

Pour the liquid over the dry ingredients and mix thoroughly

place into a dish lined with baking paper and place in the freezer

It’ll only take 30mins to set

Then enjoy and see if you can stop eating it 🙂
